The other day I was looking at about five overripe bananas and knew my family wasn’t going to eat them. Somedays that means they’ll end up the freezer where they die, or in the trash. This time, though, I experimented with my six-year-old and made these spectacular muffins. So here’s the recipe before I forget.
Chocolate-Chip, Banana Muffins
2 c. flour
2/3 c. brown sugar
1/3 c. sugar
1/2 t. Salt
2 tsp. baking power
1 tsp. soda
Mix all dry ingredients together. Set aside while you combine the wet ingredients.
1 egg
1/2 c. milk
1/4 c. butter melted
1 t. vanilla
3 mashed bananas
Once the wet ingredients are combined, put a well in the middle of the dry ingredients. Pour in the wet ingredients, and blend lightly. Quickly fold in as many chocolate chips as you like. Spoon into greased tins and bake until the tester comes out clean.
Bake at 375 degrees fro 15-18 minutes. Makes approximately 18 depending on the size of your pan.
