Here’s an easy dish that you can make ahead and freeze. The kids like it — always good. And it reminds me of stopping at Grandma’s house on the farm. Bon Appetit!
Porcupine Meatballs
1 c. minute rice
1 lb. ground beef
1 egg
2 t. grated onion
2 t. salt (I use 1 t.)
1/8 t. marjorum
pepper
1/2 c tomato juice
Combine the above and shape into 18 balls. Place in skillet. Pour 2 cups tomato juice over the meatballs. simmer 15 minutes until cooked. Yum!

I’ve not heard of these in years! I remember a friend’s mother who used to make them and they were always so good. Thanks for sharing the recipe and bringing back fond memories at the same time.
